This recipe made a ton of delicious latkes that my whole family enjoyed! The latkes were flavorful and crispy on the outside and had delicious flavor. Thank you, Mandy Patinkin's mom!

Made it exactly as recipe reads and it turned out great. Served with Sour Cream. I made it to serve with Meat Loaf but....the family ate them as I made them.

Changed the ratio as I didn't need to cook for many. I used 4 russert potatoes 1 onion 1 egg which yielded 6 latkes. Here's the kicker, going straight to hell for this one as I added some rendered bacon into my pancakes, YUMMMM!!!!!! added a little salt, dusted with flour fried them up and they were heavenly.... Do like the lox idea too @mm45 will try that next time....

This recipe is absolutely perfect - flavorful, light in texture, melt in your mouth. They also are great when served with smoked salmon, caviar, Mexican salsa. They are a great starter, side dish or party appetizer too.
