    Quinoa is my new favorite grain and this may be my favorite way of eating it to date. So light and fresh and tasty and everything I love in a salad. I'll be making this a lot.

    I've made this delicious healthy recipe quite a few times and it's always a hit. I don't serve it on endive, and I always cook extra quinoa.

    Very tasty. Add a little minced jalapeno for heat, drain excess liquid for extended shelf-life (less mush in fridge.

    So so so very tasty. Perfect way of integrating new grains into your diet. This salad is awesome as a side dish or light lunch on a hot summer day. The flavors meld to create a light and crunchy treat with the added luxury of avocado for a touch of creaminess.

    I have never cooked or eaten quinoa before, but I found it to be a delicious alternative to rice or cous cous. This is an excellent and flavorful salad. Everyone at the table enjoyed it. I would recommend eating this salad within 24 hours as it gets a bit mushy on the 2nd and 3rd day. This recipe also makes a lot: for a side dish it probably serves 8.
