Ingredients

  • 4 portobello mushrooms stemmed
  • 5 ounces goat cheese
  • 1-ounce thyme leaves
  • 2 teaspoons lemon juice, divided
  • 2 lemon, sliced
  • 4 whole wheat buns
  • 2 bunches arugula
  • 1 tablespoon minced garlic
  • 1/2 cup mayonnaise

Directions

Clean gills from mushrooms. Combine goat cheese, thyme, 1 teaspoon lemon juice mix well. Stuff seasoned goat cheese into mushroom cavity. Grill stuffed mushrooms 10 to 15 minutes, add lemons and bread to the grill. Combine garlic, mayonnaise and remaining 1 teaspoon lemon juice for aioli. Spread aioli generously onto bun. Add arugula, grilled mushroom and grilled lemons to burger.

    Yum! My son actually said they were better than the gound beef burgers I had made for an alternative if the kids balked! I also skipped the grilled lemons and the feta makes this dish...substitution is not an option unless you're going for gorgonzola or something equally strong tasting. Our only complaint - they were so juicy you had to really make sure you leaned over your plate and the buns got a bit soggy. But so delicious, we didn't actually care.

    We made this as it reads and thought it was wonderful. Bright lemon, peppery arugula, creamy goat cheese and earthy mushrooms. It all works!!
    The reviewer before me made it with cream cheese! No wonder she thought it was average!! TRY THIS!

    This was a unique idea for a burger, but it still tasted somewhat ordinary. I wouldn't bother with the grilled lemons. But otherwise it was an average burger. Also, goat cheese can be a little pricey, so I just replaced it with cream cheese and it tasted fine.
