It was delicious, but it needs to be cooked longer than the recipe calls for, so as to cook the eggs.

I served this dish at a bridal shower (as a crustless quiche alternative and it was a hit. The mushroom mixture was delicious! Two tips: Make sure the zucchini rounds aren't too thick and add extra mushroom mix - it really adds to the flavor.
