I tried this recipe with a small twist, added onions in the marinade and Dupree Rib Rub since that's what I had on hand. Turned out great! Cooked ribs for 2.5 hrs on 200 degree grill. Last 10 min basted ribs with Sweet and Spicy Chipotle Barbecue Sauce.

We ushered out 2004 with this dish. We made a modification on the cooking, however. We had 2 sets of ribs utilizing both smoking surfaces for 5.5 hours. We added 16 coals every 90 minutes. The tastes were fantastic. Only advise: lots of napkins!
