I love this recipe. Easy and delicious. I make the quinoa in a rice cooker with chicken or veggie stock and added mushrooms to the caramelizing onions. Great side, but i could also eat it as a main dish with a side salad.

I tried this recipe because I wanted to make quinoa with what I had at home and avoid a trip to the store. This recipe is very simlpe and makes a delicious meal with veggies added on the side. This may very well become a staple meal in my house because everyone liked it and it was so easy and quick to make.

The onions add flavor for a great taste. Even good as a leftover, which is nice since it makes so much.
