    Very easy to make. Add more chilis for spiciness. Maybe even some red bell pepper to add some color to an easy and good side dish.

    Perfect example of simple fresh ingredients adding up to a delightful dish. Sweet white corn makes all the difference.

    I used to make this dish when I lived in NM and its great and good for you too. Fresh green chile makes a big difference if you can get it. You can adjust the amount used too. I used to top mine off with a bit of grated cheddar or monterey jack cheese sometimes
