The only thing tricky about this recipe is that it does take awhile to make. I have an average size blender/food processor and it took quite a few batches before everything was pureed. But it is a delicious soup. My guests were totally impressed, even one who did not consider himself a gazpacho fan. It's not too tomato-y, making it even more appealing.
