    Use both okra and file powder

    I really have never cared for any of Bobbys recipes, now I see why, I do not think he can cook his way out of a water paperbag.

    Sorry. Bring married to a real cajun makes it really hard to not be judgemently of this

    I really enjoyed the gumbo. I must say that i did not like the roux being made almost last in the cooking process. I made my roux a little earlier and added it to the mixture and let it cook for 50 minutes so that I would not taste the flour. But overall it was a good recipe and could feed an army.

    Even rookies know you START the gumbo with the roux and build up from there. The rouxcombined with the 'southern holy trinity' of onion, celery and bell peppers is the fondation of gumbo, as well as a number of other cajun and some creole dishes. Also file is added AFTER the gumbo is REMOVED FROM THE HEAT. If not it becomes stringy and tough.

    I made this gumbo for my office holiday party. It was really good!! I doubled the recipe and added 6 boneless skinless chicken thighs (browned in olive oil and cubed The whole pot disappeared in no time!!

    This was the first time I ever made Gumbo. The only exceptions were adding a cup of okra and shrimp. I loved it!

    Great recipe. Requires a lot of materials and time, but the final product is great gumbo. I may not be the best source for an opinion on gumbo, but what this recipe yields is good eating, especially if you use the right ingredients and follow the recipe.
