I make this reipe frequently, using only half. I have access to real fish broth and a little goes a long way. I cup does it for me. You might try bottled Clam Juice, but use Chicken broth for the rest. Also I would cut down on the rice, maybe by a 3rd. Everybody loves it once I reduced the fish broth.

The receipe was fantastic. I served it at a football party with 16 people and there was plenty of food as well as praises. The spices were just right not too hot. It pays to scroll down the web site and try different receipes from the Non food network stars. If you do make this sautee in the larger pan as suggested but finish cooking in a larger pot. My skillet could not handle all the great ingredients.

My boyfriend and I enjoyed this very much with a few adjustments. At the suggestion of reviewers, I cut the recipe in half and added less cayenne pepper. I'd guess there was still had enough for 6. I had to add a little more stock to completely cook my rice. FYI if you've never tried jambalaya before: There should not be any liquid left once the rice has finished cooking. This is a hearty main dish that could be served alone.

I enjoyed this receipe very much. I made it as a side dish for a family gather of about 15 and I doubled the receipe which wasn't necessary. I had way too much. Also, the only thing I would change is the type of rice used. I'd use a better quality whole grain rice instead of your typical everyday rice. I think it would hold up to the liquids better and not border on the mushy side. The combination of seasonings was good.

First, this reciepe says serves 8, all guest agreed, more like 14 and with way too much rice. Says serve in bowls,no liquid when rice cooked. Says use large skillit, no way, had to finish with my turkey roaster on two burners to finish cooking. Would try this again, with all proportions reduced. Cut chicken, peppers, rice,in half.

This recipe is great, however, I would recommend using 1 tsp of cayenne instead of 1 tblspn because it was simply just too hot.
