    The next best thing to southerned fried chicken. I soaked my fish in milk for about 20 mintues instead of one hour. I cooked 4 fillets therefore ...I used only 2 cups of cornmeal, one white & one yellow and cut all the spices in half ...except the red pepper.

    I didn't have milk or regular corn meal, so I used cornbread mix instead and it turned out much better than I could have ever expected.

    This is such a healthy alternative to frying foods in general. With a a rack and broiler pan your dish will come out as crispy and tasty as if you deep fried it!!!!!!

    I recommend a much lighted breading. Too much cornmeal in my version made the exterior gummy instead of crisp, but it would've worked like fried catfish if the outside of the fish was lightly dusted...I'll re-do next time.

    Also, I marinated my fish as it soaked in the milk for better flavor... just salt, pepper, cayenne and garlic powder.

    Definitely took longer than 10 minutes. I'd say 15-18 minutes is closer.

    Grand kids loved the way it was cooked, They asked for seconds and they usually do not do that, i have made this may times. I did not use the red pepper kids don't like it.

    Extremely bland. The time to cook is way off (NJ. The outcome is a pile minced fish.

    This recipe was quite easy to make. I had to substitute the cornmeal for a box of cornbread, because that is what I had on hand. The family loved the fish. Thank you.

    The recipe has a good flavor, and is very easy to use. However, it asks for 7 cups total cornmeal. Unless you are using BIG fillets, this is way more than you really need. For 8 (approx 6 oz catfish fillets, I had good results using about 2 cups yellow corn meal, and since I didnt have any white corn meal - I substituted 1 cup of flour. I would just back down a little on the thyme.
