    This is a great recipe, the essence of simplicity, and absolutely delicious. However, be careful. The market had only quarter-pound filets the day I shopped--very small, so they cooked quickly as I knew they would. However, they fell apart somewhat on the first turn even though I was very gentle and am a "one-turn-only" person myself. I reduced the sauce a little because I find thin sauces less interesting, and it was still delicious, although the reduction made it saltier, of course. In anticipation I salted the fish very little before cooking. The reduced sauce was very good, too, and it did not pool on the serving platter.

    Me, I love fish....My wife, not so much....I talked her into trying this meal, she agreed now she swears she loves flounder. Dish was very easy to make and made for a quick meal. I did not add the capers.

    This recipe is very, very easy and is on my list of my favorite weekday meals. Everyone in the family enjoys it. Even those who aren't big fish eaters.
    I do hold back on the capers a bit. Probably use half a small bottle. (or 2 tablespoons of capers and the liquid.

    This is a really great, really easy recipe. (Would not suggest it for little ones unless they really like Fish The one clarification I will make is that, be sure your fillets are thick... if they are kind of on the thin side your fillets will end up very chewy. I had some of both and the thicker ones came out great.... thin ones not so great. But over all I would recommend this recipe.
