Great recipe. This is a simple, subtle dessert that is so easy to make, it's ridiculous to not try these at home. You can omit the honey & they're still quite tasty (more like a donut.

Not only was the batter extremely easy to prepare and the ingredients very easily accessible, but the it was also low cost. I only had a problem locating the chestnut honey so instead used clover honey, which no one seemed to mind. Next time I might also try the orange blossom honey. The fritters were crispy on the outside and light and fluffy on the inside and sweet. Even my husband who doesn't like ricotta cheese loved them. It was a truly an delightful way to end our Italian Christmas dinner.

You wouldn't even know it was cheeses you were eating. My husband was the only one not to fond but everyone else loved it.
