As a Louisiana native, I have cooked numerous quail recipes. This receipe was deliciously different and one that I will definitely prepare again, especially for our outdoor sportman friends.
FYI - Crystal Hot Sauce company was destroyed in Hurricane Katrina.

I can't speak about the stuffed quail but, the spicy white wine sauce is great over chicken.
