    Good cake...but a lot of pans...I added banana as well. The frosting was terrible!

    cake was very tender but a LOT of bowls, etc. to clean up. Frosing was very runny and too sweet.

    I tired to make the frosting, and it was awful! The frosting never did thicken. I was at best a runny glaze. It tasted wonderful, but unless you want coconut soup, I would not reccomend this frosting recipe.

    Great cake. Very light and fluffy. Reasonably easy...even for a first timer...but please skip the fresh coconut. Just by the frozen!

    I made this cake and didn't like it at all but I think my fresh coconut was not any good. But I cooked the frosting much longer than 5 minutes (about 15 and it never did thicken up. I can see me making this again but using purchased coconut and making a frosting I know works. Also, do you need to grease the pans?

    This cake is awesome. I made it for my parents last christmas and they loved it so much a long with the rest of my family, that I demands to make it again for my summer vacation that I finished in August and demands from all of my aunts to make it again. My 3 year old loves this cake. I myself am not found of cake, but I love this one. It is a very moist tender cake. I also added pecans to it because my mom loves nuts and it made it even better. The only thing is that I chose to go with a regular white icing and added coconuts and pecans on top of it. If you love coconut and cake, you must try this recipe. I guarantee a homerun with anyone who eats it!!!!!

    The cake in this recipe seems nice and light without overpowering sweetness. However, the icing is a big mess. Way too runny. I just couldn't get it to thicken up, so I used it as a filler and covered the cake with a cream cheese version.
