Frozen Ravioli Wonton Soup

Ingredients

2 tablespoons olive oil

1 tablespoon finely chopped garlic (about 2 cloves) 

1 tablespoon finely chopped ginger (can also be finely grated with a rasp grater) 

One 32-ounce box low-sodium chicken broth 

2 tablespoons soy sauce 

One 9-ounce package frozen meat ravioli 

1 cup packed baby spinach leaves, roughly chopped 

1/4 cup thinly sliced scallions (about 2 stalks) 

Directions

  1. In a medium pot, heat the olive oil over medium heat, add the garlic and ginger and cook for 1 minute. Add the chicken broth and soy sauce and bring to a boil. Add the ravioli and simmer for 5 minutes. Stir in the spinach and cook for another minute to wilt. Ladle into bowls, top with scallions and serve immediately.

Thought it was very good. Have made it many times. I have also varied it by using my own homemade stock, sometimes using finely shredded cabbage, I add a little more soy and hoisin. Overall, I can recommend it.
