This recipe is absolutely delicious!!! I've only made it once and my family has been begging for it ever since. I omitted the pine nut due to personal preference and looked high and low for the Manchego cheese and couldn't find it but substituted it with mozzarella and gooda cheese. Although for me this is more of a special occasion dish, it is a MUST TRY!!

I love making Eggplant Parmesan, my mother always made it, and now I make it, and when I saw this recipe demonstrated on Paula's Party, I thought it would be a chance to learn to do something different with eggplant than the usual way. I only tried this once with the ingredients I had on hand, so I skipped the chorzio sausage and the pine nuts and substituted mozzarella cheese for the Manchego, but wow, I haven't had this much excitement in my house over a new dish in years! The combination of the Bechamel white sauce and the tomato sauce and cheese was to die for! I will definitely try it with the called-for ingredients, but I'm telling you, it's delicious even when cutting back on the special ingredients. I also baked the casserole instead of broiling it, and the flavors just melded together - it was heavenly! I'll definitely make it for friends over the upcoming holidays!
