This recipe looked very easy when it appeared on TV. I tried it and the mixing part was easy, but when you baked everything and cooled it... I couldn't get it out of the pan. I used a non stick pan and even tried the second time to spray with pan with cooking spray with no luck. Taste wise... the coconut macarron part was good.

I saw this recipe on the air a few days ago and decided to try it for a party I'm going to tonight. It looked really easy and delicious. I bought a non-stick mini muffin pan as recommended, and I had a regular mini muffin pan already. I sprayed the regular one with non-stick spray, but not the non-stick pan. The macaroons just clung to both those pans for dear life. I could not loosen them for anything! I put them back in the oven at 200 degrees for about 8 minutes, and was finally able to get them out of the pans. Of course they looked like road kill, so I tried my best to recreate the cup shape, filled them with the ganache, and put them in the refrigerator to set. They taste absolutely delicious, but they look like little coconut orphans, all disheveled and sad.
