Ingredients
- 3 eggs
- 1 cup flour
- 1/3 cup sugar
- 1 cup milk, boiling
- 2 cups stoned black cherries
- Powdered sugar, for garnish
Directions
In a bowl, whisk the eggs. Gradually whisk in the flour, then the sugar, and finally the boiling milk, mixing thoroughly. Let stand for 2 hours to rest.
Preheat oven to 325 degrees F.
Strain batter into a buttered 9-inch cake pan to remove any lumps. Cover the top with cherries and bake for 35 minutes. Sprinkle with powdered sugar and serve warm.

This recipe has way too much flour. It has twice as much flour compared to the other recipes I have made in the past. The end product is gummy and inedible.

Something about this recipe isn't right. I thought it seemed a bit simplistic for a clafouti, but Gale Gand's recipes are virtually always excellent, so I tried it anyway. I agree with the previous reviewer's comments that the end product was just horribly gummy and, well, basically inedible. I'm not sure what needs to be modified to make this recipe work, but it is really NOT workable as it's written.

I made a cherry clafoutis a long time ago, and really liked it. This one didn't compare though. I wanted to try it with fresh cranberries, and also added vanilla, whiskey and salt to improve the flavor. But the texture wasn't quite right. It was very thick and sort of gummy. Topping it with toasted sliced almonds did improve the overall product though.
