These were ok. The filling was not sufficient for the batch, I ended up making them as the recipe called, then coring the cupcakes after and filling them with a creamcheese, sugar mixture. I felt there needed to be more of a contrast to the chocolate. The cake mixture itself was super moist and tasted great. The chocolate frosting was great, very rich, and actually tasted better after setting in the fridge for about 4 hours after frosting the cupcakes. I also had to add more sugar to the frosting as it was wayyyy to thin. I got a lot of compliments though after trying a few and fixing them but the general recipe was a great idea. I would make them again but maybe make a peanut butter cream cheese filling, and peanut butter frosting. All the chocolate upon chocolate was just too much.

well the cupcake was ok, not the best thou. the filling didnt stay in exept the chocolate pieces. and for some reason they didn't rise as much as i would have wanted.

These are good moist cupcakes. My cream cheese filling didn't stay in the middle but rose and spread over the top the chocolate chips stayed in the middle though. I had at least twice as much icing as I needed and wasn't skimpy when I iced them. Time consuming to make with having 3 different parts to make but if you like the kitchen it's fun. I would recommend these.

What I did is I doubled the entire filling recipe, besides the chocolate chips and vanilla, and used cream cheese frosting instead. But I also added a little twist to mine. I love my Kroger vanilla, butter, and nut flavoring so I also added 1 teaspoon of that along with the reg. vanilla to the filling. It gave it a nice kick!
I'd reccomend this recipe to anyone, it was really good.

..which is why my cupcakes were a total disaster!!!! it mustve been missing baking soda or eggs.. because they didnt rise at all.
a total bust.

I love Emeril's chocolate recipes. I am not sure what went wrong. I followed the recipe to the word except that I used the silicone cupcake holders. The cupcakes were just to gooey, they didn't seem right and they did not taste right either. The cream cheese frosting/filling was quite good. I have not tried making this recipe again, just because the first one was such a disaster. Maybe I just did something wrong.

I absolutely love the frosting and will use it again in the future. I think I will even use it in my fondue pot for strawberries and bananas. I didn't like the cupcake so much. I was expecting the creamcheese filling to be like a filling but instead it baked in with the rest of the cake so wasn't very noticeable. I really liked the frosting though! Also, the recipe does not make much filling. Seemed like I needed a lot more.
