You can create up to five timers

These are kind of like an individual fluffy apple pancake.

Ingredients

  • 2 eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons plus 6 tablespoons butter
  • 1 Granny Smith apple, peeled, cored, and cut into 1/2-inch cubes
  • 1 cup raisins

Directions

Heat the oven to 425 degrees F.

Whisk the eggs and milk together in a medium bowl. Add the flour, salt, and sugar and whisk to blend. Melt 2 tablespoons of butter and whisk it into the batter.

In each cup of regular sized muffin tins, divide cold butter, apple and raisins. Place the muffin tins in the oven for 5 minutes to melt the butter and cook the apples slightly.

Remove the tins from the oven and pour the batter into each cup filling them half way up. Bake for 10 minutes, then reduce the heat to 375 degrees F and bake until puffed and golden brown, 15 to 20 minutes more. Serve hot.

    I made a couple of changes based on the other reviews - I used 2 tbs of vanilla sugar and put a pinch of cinnamon on top of the butter, aplle golden raisin mixture before baking for 5 minutes. I used a popover pan and they all popped!

    These supposed "popovers" were nothing like a popover nor a puffy pancake and the timing stated for cooking was way off - I'd not bother to make again. Even my ducks would not eat them!

    actually, they weren't really good at all. It probably all depends on what everyone likes. My husband and I didn't really like them. The texture was way off; it was like a pankcake that was soggy. I added more sugar and even used sweet apples (from some of the other reviews, but it didn't help. Unless you love soggy pancakes, this one probably isn't one for you.
