The cake was dry and next time I will use half oil instead of all butter. 1 hour and 15 minutes is wayyyyy too long. I could barely cut through the cake. I added 2 t of vanilla for the one batter and instant coffee and chocolate chips for the other.

Great recipe! I tried it last evening and we all loved it. I used extra moist sponge flour but I think I should have used plain all purpose instead. Other than that it was just delicious!

I read the reviews and made alterations. I added wayy... more vanilla like 4 tsp. I added more sugar (2 3/4 cup and a lil more milk. I also added 1/4 cup of vegetable oil to make it super moist. I poured half the batter in a bunt cake then added 1/ 4cup of sifted cocoa to remaing batter. Basically I changed alot and merged Paula Deen's pound cake with the base substance of this. It was AMAZING!!! The cook time was off to me, 55min worked for me : Wow!! Seems this review has become about my recipe, yay for me. But inspired and base by you. :

Delicious! Easy to make love, love the coconut in it. A very good pound cake, the only thing that I did different is that I left the cake in the oven for longer time since I like it a bit toasty! Definitely
    A keeper :

This is an amazing recipe it work great. But for me I can never master creaming the butter properly and i use oil instead of butter and it works great also. So for those like me who don't get the best results with butter try using oil instead it works as great.

Made this for my husband's b-day and it tasted fantastic! I did follow a previous reviewer's recommendations and changed the recipe a bit (so I suppose I'm reviewing my own recipe.... - decreased the butter to 3/4 cup and added about 1/3 cup veg. oil. I also used 2 tsp vanilla, 1/2 cup milk & 1/2 cup sour cream. I omitted the coconut b/c I'm not crazy about it. To the chocolate part of the batter I added 1 tsp cocoa, plus 2 squares of ghirardelli dark chocolate, 1/4 cup chocolate chips, and 1 tbsp butter melted together. Then added 2 tsp ground espresso to that mixture. Baked for 55 min. and this came out outstanding! My husband who does not normally like cake loved it!

Very tasty! I added an extra tsp of vanilla, excluded the coconut, and it was delicious! As mentioned before, it was difficult to stop eating without any icing, I had to step away. :
Those that didn't get the same result maybe over baked or didn't do the 5 minutes mixing maybe?
I baked a 1/2 sheet for 30 minutes at 350 in an electric oven. For one 1/2 sheet pan, I used a whole batter for the vanilla part and half of another batter for the chocolate part (chocolate part I put 7 tablespoons of the cocoa to the whole batter.

Twinkle Lady - 3/6/2011 - I made this cake about a month ago and was definitely disappointed in the results. I am a 'senior lady' baking for many many years and decided to try it again because my husband requested a Marble Cake. This time I added more vanilla (2 tsp, used 1/2 cup milk and 1/2 cup sour cream.I did not have any cocoa so substituted 1 square of Bakers' Chocolate, 2 tbl. butter, 1 tsp. coffee granules, and 1/2 cup of chocolate chips melted together. Baking time is dependent on your oven, but it was done in 45 minutes.
It was moist and had lots of flavor -- will definitely make it again but it did (in my opinion need tweaking.

I followed this recipe exactly. Before baking this cake I read the reviews and I agree with most of them. This cake is bland and very dry. It might be better if 1/2 cup of vegetable oil was added with and an adjustment to the butter content. Sadly, I'll not be trying this one again. Ina Garten has a fabulous coconut cake recipe.
