I've made these for an annual brunch for a crowd. Be careful not to over-bake. Use really good chocolate. The marshmallows have a tendency to "evaporate." I like to dust them with confectioner's sugar after I plate them, so they look a little more attractive.

My kids love these brownies! They are not allowed to have nut products at school, so I omit the nuts and add chocolate chips. I let them help make them by giving them clean safety scissors and regular size marshmallows. They really enjoy cutting the marshmallows into the right size for the mini muffin pan.

I LOVE rocky road ice cream and I wasn't in the mood for something cold and found these and decided to try them out on myself and my husband and our friends. What a hit. I made 48 of them and still couldn't keep up and was asked for more. Delicious.

The taste is 5+ stars but the marshmallow turned a beige color and didn't look appealing.

These are so easy to make and so delicious. Everyone loves them. I make them pretty often, especially when I have to bring something into the office. They're gone before I set the container down.
