Ingredients

  • 2 tablespoons warm water, plus 1 1/3 cups warm water
  • 1 package dry yeast
  • 1/3 cup brown sugar
  • 5 cups flour
  • 1/2 cup baking soda
  • Kosher salt
  • Mustard, as an accompaniment

Directions

In a large mixing bowl, mix 2 tablespoons warm water with the yeast to dissolve it. Then stir in the remaining warm water and brown sugar. Place bowl on a mixer and using a dough hook, gradually add the flour and continue mixing until it forms a ball. Turn it out onto a work surface and knead the dough to make it smooth. Use enough flour on your work surface so the dough is not sticky.

Preheat oven to 475 degrees F.

Butter 2 sheet pans. Bring 2 quarts of water and the baking soda to boil in a large saucepan. Cut dough up into golf ball size pieces. Then roll them into 1/2-inch thick worms. Form a U then cross the ends, twisting at the middle. Fold the ends back down to meet the U (which is now an O) and press to secure the dough. Drop it into the boiling water for 30 seconds then fish it out and place it on the greased sheet pan. Sprinkle with kosher salt. Repeat with the rest of the dough. Bake for 8 minutes or until golden brown.

    This recipe was easy to follow. However, it seemed just a tad bit too chewy for my tastes, i prefer a softer recipe. Also i... had to adjust the recipe by a few tablespoons of water give or take I suppose by your brand of flour or measuring cups. i think maybe if it sat out to rise for a while before shaping, then perhaps it would fluff better during baking.Read more

    Within the last 2 hours, I went to the store, picked up some packs of yeast and just made my first batch of Gale's soft... pretzels. My Husband has just devoured all but a few of these small treats...and he's going back for more. They are soft, chewy and taste much like those Aunt Annie pretzels from the mall. TIPS: 1) The recipe calls for 5 cups of flour. You do not need 5 cups. It will be way to dry and will not form a ball (i know from trial and error). Just use enough to get the dough to form a slightly sticky ball. I used about 3+ cups. 2) I brushed a tiny bit of butter on the pretzels before putting them in the oven, then sprinkled on my kosher salt. 3) As the pretzels cooled on the rack, I brushed them again with butter. These pretzels will be a hit!! I plan on making them often, especially when we have company over. They are soft, warm, buttery...and now in my husbands tummy! Go make them!Read more

    I followed the recipe exactly and it made about 8 medium sized pretzels. They came out perfectly. I rubbed sweet cream butter... on them and added some kosher salt. They were ready in EXACTLY 8 minutes and would have burned if they had been in any longer so be sure to watch them. Great recipe - I'll be making these again.Read more

    This recipe is really easy and totally foolproof. The only thing I would change is to bake the pretzels for slightly longer... for a deeper golden brown color and flavor.Read more
