Ingredients

  • 1 cup chopped dates or whole raisins (dark or golden)
  • 2 cups all-purpose flour
  • 3 eggs
  • 1 1/2 cups sugar
  • 1 cup vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1 teaspoon pure vanilla extract
  • 2 cups apples, peeled, cored, and cut into 1/2-inch chunks
  • 1 cup chopped walnuts
  • Glaze, recipe follows

Glaze:

  • 1/2 cup maple syrup
  • 1 1/2 cups powdered sugar

Equipment:

  • 1 or 2 mini bundt muffin tins (makes mini bundt cakes with no hole) or 1 regular muffin tin, buttered and floured (or use nonstick)

Directions

Place the dates in a bowl and toss them with 2 tablespoons of the flour until lightly coated (this will prevent them from sinking in the cake batter during baking). Heat the oven to 350 degrees F. Beat the eggs and sugar in a mixer fitted with a whisk attachment (or using a hand mixer) until fluffy. With the mixer running, slowly pour in the oil. One by one, mixing well after each addition, add the remaining flour, salt, baking soda, cinnamon, cloves, allspice, and vanilla. Mix in the apples and nuts, then stir in the dates by hand, distributing them evenly in the batter. Pour into the prepared pans and bake about 35 minutes, until springy and dry in the center. Let cool in the pan on a wire rack, then turn out. To make the glaze, stir the maple syrup and sugar together in a bowl. Glaze the cooled cakes by spooning it around the tops of the cakes and letting it drip down the sides.

    This provided a great basis when I wanted a recipe to use up some galas that had been languishing in the fridge forever. I... had a lot of them, so I made 1.5x the original recipe, and I cooked two apples down into a quick applesauce, which I substituted for most of the oil. I also substituted whole wheat pastry flour, used slightly less sugar and added 1 T. molasses, and skipped the glaze (wanted them to be a little healthier so they'd be a good breakfast option). 1.5x the recipe made 18 regular-sized muffins and 1 medium loaf-pan. The muffins took about 25 min. to cook and the loaf pan took about 45-50 min. (it sounds like another reviewer tried to bake this in a large bundt pan and only cooked it for the 35 min. required for the mini-bundt muffin tins used in the recipe--no wonder it wasn't done!) I'd definitely use this recipe again as a way to make something pretty tasty and reasonably healthy from some excess apples, and I bet with the oil and some good flavorful baking apples like Granny Smith's it would be even tastier.Read more

    Incorrect cooking time

    I made this cake for the first time for my son's school activity the next day. I followed the directions and baked it as... directed, 35 minutes. I was so upset when the bundt cake was not baked all the way through. I had to put in back in the oven so not sure the total bake time. I am sad to say that the recipe didn't result in a yummy bundt cake and now I have to buy a store bought cake for my son's event. I would appreciate if the recipe are fully tested before publishing.Read more

    The recipe is a good one, but the cake can be made better with more spice (cinnamon and allspice) and smaller apple pieces. ... I tried to serve this cake after baking and cooling it, and it was a little tough and hard. The texture is best (soft and moist) if the cake is wrapped for a day and then warmed before serving. Although the icing recipe is quick and easy, I think a store-bought cream cheese icing tastes better, or serve it alone.Read more

    I made this for a party, thinking for sure that Gale Gand would only have the BEST of recipes on here. The cake is ok, I... don't think the cake tasted spicy enough for a spice cake. The frosting is the worst. I would suggest using a lot less powder sugar. Too many grea recipes out there to make this again.Read more

    This cake is absolutely fantastic!! Every time somebody in my family has a birthday, they ask me to bring the dessert.... Everybody in my family loves it!! Its texture is moist, and you can even switch the apples by pears. You should definitely try it!Read more
