These were great, better than the original recipe from the Hesselbacken hotel! Those didnt have the garlic. Also, put in super thin shallot based on others comments.
Will make for New Years Eve party based on the great feedback I got at dinner!

Absolutely loved these. They cooked up perfectly and were outstanding. The kids weren't totally sold on the garlic, but it was cooked just perfectly. I would recommend finishing the last few minutes on broil so as to crisp up the top just before serving. Another great way to eat red potatoes. YUM.

Yummy, being a garlic lover I added extra garlic in the potatoes. I also topped the sour cream with chives.
The potatoes did take longer than an hour to bake though.

I bought the big wooden spoon just for this recipe. I used chopped chives in my sour cream instead of parsley - FAB! I also used a bit more garlic, actually, I used one slice between EVERY opening! It was perfect... :D

The sour cream is outstanding, my husband and I loved the whole dish!!!We love these potatoes, they are much better than regular plain potatoes.

followed recipe to a T added fresh garlic,fresh minced green onion to sour cream mix definitely make many more times "new hit' go extra mile put thinly sliced Prosciutto in between slices as well

Great presentation! Tender tatoes inside and crispy outside. Salt and freshly ground pepper is a must here. I was taste testing this at our annual family Xmas dinner a few nights ago for a holiday party I'm catering for 12 in two weeks. I followed the recipe but added more garlic between the cuts. Did not do Sunny's topping. I used some homemade pesto mixed with a bit of sour cream. Got raves! Can't wait to do it again for my clients. You have to try this!

It's quite difficult/tricky to slice the potatoes without cutting all the way through! And it's quite hard to push the garlic slices into the slits because the potato is so hard/non-pliable. Apart from being fiddly to construct, once cooked, the baked potatoes are great. The herbed sour cream was lovely - I also added some chives.

These present beautifully and are really easy to do. The thin garlic slices were delicious between the potato slices. Didn't do the sour cream topping but that would be a nice finishing touch if serving this for company. Will be making these again.
