I only changed one thing- to give the Herbed sour cream a bit more bang I substituted Herbes De Provence in lieu of the parsley, garlic powder, etc. Served them with a garlic crusted pork rib roast, roasted asparagus and a mixed green salad with a Bleu Cheese/basalmic/olive oil dressing -wonderful meal.

Different, impressive and tastes great. I have made these many times and always had a great response from family and friends. I now use purple fingerling potatoes since I have read they have antioxidants, not to mention they look cool. And so easy! I am making these and the delicious meat loaf in tri color peppers tonight...another family favorite. Thanks Sunny!

I made these for New Year's Eve, they were very easy to make, festive and absolutely delicious! I just shared the recipe link with my daughter and sisters. I've made several of Sunny Anderson's recipes and everyone has been a hit! Thanks Sunny!

I made these for Christmas dinner and am making them again tonight for New Years, they were just that good. I used thinly sliced shallots along with the garlic, and it was very yummy. Sometimes things don't need to be complicated to be delicious.

Easy to make and a definite crowd pleaser. Delicious, easy and a nice twist on the usual baked potato. Served at a friends house for a potluck and everyone loved them. Can't wait to make them again.

These potatoes are incredibly easy, but so fancy on the eye! My new fave potatoes to make for my family. You can serve these to company or make them up as a side anywhere.

Sunny...thank you for sharing this. I had my cousin and her husband along with my mother over for dinner. They all are fabulous cooks. I needed something that was unique and flavorful to compliment the grilled fillets and heirloom tomato salad. Everyone raved about the potatoes. The kitchen smelled like a slice of heaven.
