Ingredients
- 2 large sweet potatoes
- Olive oil
- 1 tablespoon fresh rosemary leaves
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh chives
- 1 tablespoon coarse kosher salt
- 1 tablespoon garlic powder
- Freshly ground black pepper
Directions
Garlic Herbed Sweet Potatoes
Peel and cut sweet potatoes into wedges. Place in aluminum foil, sprinkle with olive oil and wrap tightly. Place potatoes on grill to cook about 20 minutes. Remove from the grill and set aside.
Combine the herbs, salt, garlic powder, and pepper in a small bowl. Toss with potatoes and place the wedges directly on the grill. Remove when grill marks appear on all sides and potatoes are tender.

Very good,but I dont see any reason to peel the potatoes.I think they cook more evenly in the oven.

Very good, I did have a little trouble getting consistent doneness on the wedges, but that was more my grill having hot spots than a problem with the recipe. Tasty, although the spices didn't stick real well to the potatoes. I did sprinkle a little more olive oil on before I grilled to give some adherence to the herb mixture.

I made this recipe with regular potatoes instead of sweet potatoes. They came out pretty good but it was a bit heavy on the herbs and spices. I used fresh herbs except for the thyme which I didn't have so I used dried and reduced the amount instead. I would make these again but with less rosemary!
