    OMG! This was delicious. Took the juices from the pan and added chicken stock base to make the gravy. Added red potatoes to it. Out of a rating of 5 my family rated this a 6.

    This was a great dish for a Sunday (or any day for that matter dinner> Simple to prepare and wonderful flavor although the cooking time at the top of the recipe did not match the time in the body of the recipe. I did take 2/3's of the veggies and add them to the gravy after the flour salt & pepper was added. Hit that with an emulsion blender, and it takes on a new dimension of flavor - the carrots give it a hint of sweetness. This is my next family event meal!

    Saw John Besh make this on "The Best Thing I Ever Made," and had to make it. It's fabulous, full of flavor, and so easy. The hardest part was having to wait while it rested. Pan Sauce was delicious. I did add the leftover garlic pieces and rosemary in the bottom of the pan with the other vegetables. Also, threw in hassel back potatoes to cook in the juices.

    I've made this twice now for theater gatherings and it was a huge hit both times. It's so incredibly easy to make, and so very yummy.

    I have never did a Roast Pork before, and let me tell you when i say YAYY to me, so proud. It came out so good, even the gravy. My husband which happen to be a Chef was so in awe and he was so proud of his wife also. My children (3 yrs & 16 months old loved it... they of course ate it with rice.. oh yeah, in place of water i used Veg Stock instead.. it was awesome.. :-

    My family loved it!! Made this for a special New Years Day family dinner and everyone just loved, loved, loved it!! Especially my husband! My brother-in-law loved the gravy that was made from the pan drippings. And my picky eaters (boys ages 2 and 3 and my niece and nephew (ages 4 & 2 who are also picky as hell also ate a good portion of dinner. Rice and pork mixed with some gravy and they ate a whole bowl of it!! In place of water I used chicken stock to make the gravy.

    Loved It! It was very moist and delicious and I did not find the garlic or rosemary to be overwhelming. I used more carrot in the "rack" and they made a delicious side to serve with the pork. And instead of using just water in the roasting pan, I used two cups of beef broth and two cups of brewed coffee. I borrowed this technique from another pulled pork recipe I prepare. This makes the broth more flavorful and it does not have to be thickened. I will definitely make this again.

    YUMMACIOUS!! I don't usually like pork but this is absolutely delicious. So easy too, it has greatly enhanced my culinary reputation. I rubbed small new potatoes with olive oil and put them in around the roast to bake and they made a wonderful side dish flavored with the garlic & rosemary. Thank you.
