    Fantastic! I was craving some gazpacho, and this recipe was super simple. My husband isn't a huge fan of tomatoes, but he ate it anyway. He said it was the best gazpacho he had ever had! I am going to make more today!

    This gazpacho is delicious! We learned about the Firefly Tapas Bar on one of Rachael's $40.00 a Day programs and couldn't wait to check out the Firefly on one of our numerous trips to Las Vegas - it was wonderful and we were so happy to have this recipe so we can enjoy this delicious cold soup when we can't make it to Las Vegas.

    One note: The recipe makes a LARGE portion of soup - way to much for 2 people. It freezes nicely or make sure you invite loads of company over to enjoy it with you!

    I am giving it five stars only because I think this recipe has potential to be great, but I was let down by the resulting onion overpowerment. I also LOVE gazpacho.
    But I would use 1/2 onion definitely. I followed the recipe exactly, but added less olive oil. I missed the previous comment about the onion until after I had tasted it. Way too much. I tried to cut it down with 1/2 cup of soymilk and a little lemon juice.
    I found that the addition of the soymilk made it a bit "milkier" like the gazpacho I had at my favorite tapas restaurant. Otherwise, a tasty recipe!

    And note: Also, I am on the South Beach Diet (don't gasp and I replaced the bread with steamed cauliflower. Significant change, I wouldn't do it unless you're avoiding bread!! But it really doesn't taste that bad. Maybe add a little butter and salt to make up for the lack of bread.

    This was the best Gazpacho that I have EVER made. Gazpacho is in my top 10 of food favorites, and this recipe was by far the best. This recipe was not only the best I have ever made, it is the best I have ever had, anywhere!

    We liked this recipe a lot...the texture especially. I did add the juice of a lemon and next time I would reduce the onion by a bit and also reduce the olive oil. I made a double batch and an entire cup seemed like too much.

    This Gazpacho is delicious. I saw Rachel Ray eating it on a recent episode of $40 a day and tried it out tonight. I added the juice of 1 lemon and 1 lime, and it was awesome! Easy to prepare too.
