    This is an excellent dressing. It is quick to make and is an absolute must as a dip on artichokes as well as using on hearts of romain. On the show he used lemon juice that is not in this recipe for some reason. I used two tablespoons and it was perfect. I think this dressing is perfectly balanced with the lemon, anchovies and Parmigiano-Reggiano cheese. The dijon and the sherry wine vinegar are musts here as well. (Everyone devoured all the croutons first, so make double or triple so you can have some for another salad.

    This is the best salad I have ever had! My husband was very hesitant to even try this because he does not like most dressings however he loved it also. I cannot wait to make this for our next family get together / party!

    Best caesar salad dressing to date. I use to use Martha Stewart's but this was easier and quicker. I did not have white anchovies so used 4 slices from Italian anchovy jar. Love the roasted garlic twist. It's a keeper.

    This recipe is delicious! My first suggestion is to at least double the amount of croutons you make as you, or your husband, will likely eat most of them before dinner roles around. I am pregnant, and raw egg yolks are a no no, so I cooked the egg yolk with a little water and fresh lemon juice on the stove over low heat stirring continuously until it thickened, like a custard. It made the dressing a bit thicker than it would have been, but it tasted amazing and was pregnancy safe! This will become a must-make for dinner parties to come!

    So I just watched this show again and Geoffrey did use both a squeeze of 1/2 of lemon plus the sherry vinegar. For some reason he forgot to include the lemon in his recipe.

    After preparing this, Geoffrey mentioned how good the lemon was in it, but he didn't lemon in his recipe, he used sherry vinegar. I'm thinking lemon would be more classic. Otherwise, the recipe looks great and I'm looking forward to trying it.

    Totally outstanding and easy to make. My wife and I saw the show and later that day made it for guests and family. An instant hit! Not easy finding White anchovies but canned ones work equally as well. This has become our go to recipe. Will not disappoint. One of your Best things,Geoffrey.Yum!

    I made this for a dinner party and it stole the show. It was amazing. I modified the recipe slightly to accommodate my halal guests - substituting the juice of half a lemon for the sherry wine vinegar. It was magnificent!

    This was the best Caesar salad I have ever had! The recipe was easy to follow and a snap to make. I followed it exactly, even baking my own country bread for the croutons! Wait...I didn't have white anchovies, and couldn't find them, so I used the other kind. :
    I'm putting Geoffrey's restaurant on my "bucket list". I would love to have a meal cooked by him. What an awesome chef!
