Vegetable Slaw with Horseradish and Mustard

Ingredients
  • 3/4 cup finely julienned (2-inches long) green cabbage
  • 3/4 cup finely julienned (2-inches long) carrots
  • 1/2 cup finely julienned (1-inch long) red onions
  • 2 tablespoons thinly sliced scallions
  • 1 tablespoon freshly grated horseradish
  • 1/2 clove garlic, finely minced
  • 2 tablespoons creme fraiche
  • 2 tablespoons champagne vinegar
  • 1 teaspoon whole-grain mustard
  • 1/4 teaspoon celery seeds, toasted
  • Salt and freshly ground black pepper
Directions
  • In a large bowl combine the cabbage, carrots, onions, scallions, horseradish and garlic. In a small bowl, whisk together the creme fraiche, vinegar, mustard and celery seeds. Toss the slaw with the dressing and season everything with salt and pepper. Marinade the slaw for 1 hour.

  • Drain as desired, depending on the consistency you are looking for.
