Forget about the recipe trolls! This recipe is to DIE for! I wanted lemon cookies and I just happened to have everything I needed to make this. O my F-ing G! These are really good!

These are fabulous as is, but so much fun to experiement with. I changed to rosemary and added dried blueberries. I'm also thinking of adding some other spices, perhaps some cumin or coriander.
They are definitely a 'love it' or 'hate it' cookie. I've found that small children do not care for them and those with un-sophisticated palates don't usually like them either.
One of my very favorites. I wonder what dark chocolate would be like?!

I altered this recipe and it is deliciousI omitted the pepper, zested and juiced 2 lemons instead of one (more of a lemon flavor and added 3 tablespoons of goat yogurt instead of milk and omitted the thyme and put 2 tablespoons of fennel seeds. It is delicious and savory! My 5 year old loved them! And, I used organic ingredients and spanish olive oil from Trader Joes.

My husband is a HUGE fan of herbs like rosemary and thyme, so I figured I'd try this recipe out on a lark. I am not at all disappointed. The flavors of the lemon, thyme and pepper blend together perfectly, nothing overpowers anything else and the pepper gives the cookie a nice kick for aftertaste. I sifted the dry ingredients together before stirring. For the liquids I put the milk, lemon juice and zest in a medium bowl first and whisked them together, then I slowly drizzled in the olive oil while whisking briskly. I baked mine for 6 minutes and rotated it halfway through, and baked for 6 minutes until the edges were turning golden brown. The texture is sandy and slightly crunchy. I love this cookie! Will be making it again!

Horrible, hard and strong olive oil taste permeates. No hint of lemon nor thyme.
I'd tried these because I lost my fav lemon /thyme shortbread recipe which I have since relocated online....Anna Olson from the program "Sugar" makes the best and even includes fresh ginger. 12 minutes in the oven and they're done. Please don't make THIS poor excuse for a cookie when you can fall in love with the real thing!

I made these today and they were absolutely delicious. Like others, I cut down on the pepper since it would have been too spicy. Other than that I thought it was a simple snack and wasn't too sweet. I also added a few chopped Lemon Verbena leaves for an extra lemon flavor. (though, that's hardly necessary
A definite good use of fresh herbs out of the garden!

I am not much of a cookie maker but our Meyer lemon tree was filled with lemons and this seemed like an easy enough recipe. I loved this cookie because it's part sweet, part savory. Loved the crispy outside and softer middle. Love the hint of pepper and thyme (I reduced the pepper after reading the other reviews. I am definitely going to make these again.

Like another reviewer, thought these would be either very bad or delicious. And I agree, they are truly good. Different. Had no problem with them other than mine did not melt down much like the picture, the dough just softened a little, but stayed round. Interesting cookie. Try it.

I made them for an office party and they disappeared!
They're a little time consuming, but totally worth it! I tend to cut back a touch on the pepper otherwise its too strong.
