I have never baked Pumpkin cookies myself, but have tasted them. This recipe is great! I made a couple of adjustments...I used organic raw sugar and unbleached white whole wheat flour instead of white sugar and all-purpose flour. YUM! I will def. recommend this recipe to my friends and family!

My household LOVED this recipe. I cooked it for only 12 minutes on parchment paper, and they turned out very chewy. They remind me of the seasonal pumpkin bread that starbucks carries, but WAY BETTER!

My husband wanted pumpkin cookies when we were shopping tonight, and the grocery store wanted $7.00 for a package of about a dozen! Decided to find a recipe for myself. These are great! Husband loves them too! I added an extra 1/2 cup of pumpkin, cause we like it more pumpkiny, and doubled the spices....yum!

I have always been one who enjoys a good cookie. Perhaps I was spoiled by my mother, who i think creates the worlds greatest chocolate chip cookie ever. So good, in fact, that she won't share the recipe with any of her children, not even her husband! Therefore, my standards are very high. A cookie should have the perfect balance of chewy; not too soft that it is doughy, and not too crunchy so that you feel you are biting off a piece of brick. This cookie is the perfect blend. It's the best snack for a seasonal and festive autumn or winter day. If you enjoy pumpkin then you'll definitely like this cookie. I used milk chocolate chips in mine, and i found it to make it that much more delicious. Make sure you stir them the right way too; that way, you will get the ultimate of fluffy and deliciousness out of them. This is so much better than fruit cake or other "seasonal desserts" because it's lighter, fluffier, and easier to pass around. It begs to be a part of the holiday season. So weather you're cooking them for yourself and a good friend, or for a whole party, this is the recipe to go for.

These cookies are great, they could pass for mini-cakes, because of their moistness. I made a few changes, just to give the semblance of a healthy cookie. I mixed different flours, whole wheat, Flaxseed, cake, and white all-purpose flours, and used one cup of sugar in the raw, rather than regular white sugar.
I also added some orange zest and the juice of half an orange, walnuts have been optional (depending on my mood. Either way you decide to make these, they are excellent and crowd pleaser's, even for the non-pumpkin lovers.

I was hesitant at first at the idea of incorporating pumpkin into a chocolate chip cookie. However, this cookie is delicious and the pumpkin flavor is not overwhelming. It is a delicious holiday cookie, and it stays very moist from the addition of the pumpkin.

I was tired of making the same old traditional cookies. So I started looking for a different kind of cookie to make, then I ran across this recipe. I love pumpkin pie and I love chocolate chip cookies. So I thought i would give them a try. I was extremely pleased with how they turned out. They are moist, and fluffy which is how I think the ideal cookie should be. They are definitely worth trying!

The second time I made these I substituted 1 cup of applesauce for 1 stick of butter, and substituted 1 cup of chopped dried cranberries and 1 cup of pecans for the chocolate chips. I also added a little more of each spice. Now they're really great.

I ate way too many of these and my daughter kept sneaking them. Everyone took home extras on Thanksgiving and I still had some leftover to freeze for our cookie trade in 2 weeks. The cookies were very moist and exactly how I love a cookie. I hope the pumpkin in it boosted the nutritional value a bit because all of that butter and sugar... well, it's a treat, so it's okay sometimes :-
