The taste of this "cookie" is good but texture was more like a cake or muffin. If you like your cookies soft and cake-like then this is the recipe for you. If you like a soft but chewy type of cookie then maybe you should think of way to alter the recipe so that it works for you. This is something that I plan on doing because I liked the taste of it.

These cookies are like, as few others have mentioned, cake. If you want them to be more cookie like, subtract about 1/2 cup of flour. The sweetness is very subtle, as is the pumpkin flavor. They don't spread as they cook, so make sure to flatten them beforehand. I would make this again, definitely, but I would fiddle with the ratios of pumpkin and flour.

These cookies were very easy to make. They came out very fluffy, almost like muffin tops, but were a great variation on a typical cookie. I added chopped walnuts and everyone loved them!

I made these and everyone loved them! I like my cookies very spicy so I quadrupled the spices called for and they turned out great. Also, they are not the most attractive cookies if you just drop them onto the sheet so I dipped my fingers in a little water and pushed them down/smoothed the tops and they turned out looking amazing.

I had my doubts about this recipe because a friend of mine makes a very unique version of pumpkin chocolate chip cookies and I was afraid these wouldn't hold a candle. Boy was I wrong! These blow her cookies away! I recently got into baking this year (after years as an entree-only [amateur] chef and up until now my specialty (Kahlua-Espresso Brownies consisted mostly of a brownie mix. This is the first dessert I've ever made from scratch and was very impressed with the ease of this recipe. The only bad part is that the Libby's canned pumpkin tends to stain, so handle it carefully! :-
My co-workers are currently going insane over the cookies. If you need to be better liked in your office, I highly recommend making a batch!

I was craving a pumpkin dessert other than pie. This really hit the spot. It had all of those fall flavors and smells you'd expect with pumpkin. When I made the recipe, it made way more than 60 cookies (about 84. Also my cookies cooked in 10 minutes. (perhaps I made them too small?. Next time I will try to make it with semi sweet chips. (the milk chocolate threw off my family since I usually don't use it in cookies. Overall this was really good and creative. I'd definetely recommend the recipe.

I wasn't sure about how these would turn out but they are really good. the dough is supper sticky so it's smart to spray the non-stick even on non-stick pans.

These are absolutely delicious! Be warned that this is a huge quantity of cookies - I had around 5-6 dozen of them. My fiance and I each brought a stack to work and everyone raved about them. I also froze a bunch and they seem to thaw well.
