    1. Never would have thought to put avocado in shrimp scampi but SO good.

    2. I also added fresh tomatoes at the same time as the avocadoes and I was glad I did.

    3. I would suggest shredded asiago instead of chunks.

    4. What a FABULOUS idea to use spaghetti squash to 'replace' pasta - of course I wasn't fooled into thinking it was pasta - but it was so nice to have something to serve the scampi on - it would absorb whatver flavor you put with it - use it for stir fry, sauces, stroganoff... :
