    For eggplant haters, salt the sliced eggplant and let it sit in a colander or rack for about an hour before cooking. I promise you will enjoy it.

    I love grilling and I also love Balsamic vinegar. This recipe is one of the best low fat and low carb recipe you can make, and it is so easy to prepare.
    I just tryed it yesterday and my guests were so happy with their meal. This is a great recipe and I will definately try it over and over again.

    I love it! I leave out the eggplant generally, but love it and have gotten great responses from friends. Makes me (non-cooker proud to find an easy and great recipe!

    I could not believe how good this was. The balsamic vinegar really brought out the sweetness in the vegetables when grilled! Highly recommend!

    Basically, all you have to do is just buying the vegetables on the ingredient list. I am preparing a birthday party for my hubby who loves veges. He will definitely love this dish!
