    This was great. I found and used baby white eggplant which is not as bitter and I loved it. I started thinking how this would taste if I were to brush on balsamic vinegar that's been reduced to a syrup....hummmmm

    Lacking the energy and time to light the grill, I instead opted to roast the veggies in a 450 degree oven. They turned out well although I would not bother with the scallions next time and I would substitute baby portobellos for the caps.
