    My mom is on a low carb diet, and she made this for our family Christmas dinner. I am not watching my carbs and I LOVE mac & cheese, and this dish was FABULOUS!! The flavor was great, and I thought it was better than the traditional baked macaroni and cheese. Even my 13 month old daughter loved it!

    EASY AND DELICIOUS. IF I HAD TO GIVE UP MAC AND CHEESE, THIS WOULD FILL THE VOID--BECAUSE IT IS SO CHEESEY.

    This recipe is EXCEPTIONAL! Be certain to use Dijon mustard (which has white wine and gives this recipe it's fantastic taste. Slice cauliflower as you would potatoes and cook al dente (slightly chewy so that it most closely resembles potatoes in texture.

    May also substitute celery, broccoli, jerusalem artichokes, or jicama (all low carb choices, each of which will have its own distinctive taste.

    I also added more cream cheese to make the sauce thicker, but bear in mind that this will also add to the carb count.

    I don't know how, but this does taste like mac and cheese! I am not a person that is big on low carb dishes usually but this is TERRIFIC!
