I actually thought this was really good. Like another reviewer mentioned, I did add a few things to make it more of a main course. Rather than use garlic powder, I sauteed some sweet onions and garlic and added that along with chopped kielbasa. It had great flavor, and it was super easy. My boyfriend said he didn't even miss the noodles. The sauce was slightly runny, runnier then I would prefer in my mac...but perhaps adding more cauliflower than the recipe calls for would resolve that. I'll try that next time. Regardless, this was a really tasty dish and I can definitely recommend it.

This was a great recipe. It is rich even with using light cream cheese but it was marvelous. Thank you for this excellent idea.

This is a very tasty dish and the kids loved it! I microwaved the cauliflower for five minutes instead of boiling because I wanted to keep the "crunch" and avoid sogginess. I also kept it lighter by using light cream cheese and half and half instead of the heavy cream. I added diced ham to make it a main dish, but diced chicken would be very good too. Next time I will use some fresh minced garlic instead of the powder, and maybe some diced onions. With these modifications, this is a healthier version, and a great go-to dish!

This dish was just ok...I don't get how it tastes just like mac and cheese because it doesnt! I probably wont make it again!

We loved it. It's not going to replace our Kraft but it's a close second. Thanks for a winning dish........

Gluten-free and tastes great. Instead of just cheddar, I mixed some other cheeses with the cheddar and also added turkey bacon and onion to make a main course. Excellant.

This is one of my favorites. I'm a little bad though. I like to double the sauce because I love the flavor and creaminess of it:

ATKINS DELICIOUS, hubby loved it and asked for a second huge serving. Thanks for awesome recipes for people on a low carb diet. I will make this for parties so I know something is on the menu that I can eat and everyone else will love.

We enjoyed this, tasted like Mac and Cheese (I think I like it more than M&C. Great way to use up cauliflower and we will definitely be making this again.

Simple dish to prepare. I prefer my veggies with a crunch so I steamed vs boiled the cauliflower. Cheese sauce was good w/ the mustard, did not get watery at all.
