    I thought this dish tasted very good, but the sauce was a little runny. One quick tip that worked for me was placing the raw califlower in the casserole dish sprayed with cooking spray and microwaving for a couple minutes instead of dirtying another pot by boiling. Then I just poured the sauce over the califlower already in the caserole dish. Plus it didn't make the califlower as mushy. My daughter will not eat it if it's mush.

    A great side dish whether you are on a low carb diet or not. Extremely easy to make and the sharper the cheddar, the better the dish.

    I have been making this recipe for a while and everyone loves it. I have tweaked it a little to make it lower fat. I use reduced fat cream cheese (not the light and reduced fat cheddar cheese. It tastes great and it a little healthier. I also add some Frank's Hot Sauce to the recipe.

    This is one dish that I won't be making very often. I love it so much that I almost eat the whole thing. On a low carb diet, mac and cheese is something I crave but can't ever have. This was just awesome. You won't miss the pasta, trust me!!! Kids would love this too, no question about it.
