    Even you "cauliflower haters" will enjoy this dish. I have served it a number of times and always get someone who says they didn't think they like cauliflower, but loved this. It has tons of good flavor. I added spice with some crushed red peppers also.

    I have made this several times. I highly recommend that the cauliflower be steamed instead of boiled. I use one of those old fashioned collapsible steamers. Once it is crisp-tender I set it on the counter to dry out a bit while I prepare the sauce in the same pot. Using this method I have never had a problem with the cauliflower watering down the sauce after it is baked. This time I used a little bit more cream cheese and a combination of a sharp Canadian white cheddar and mild yellow domestic cheddar. Perfect blend of creaminess and flavor. I also baked it about 10 minutes longer to get a bit of a crispy crust. This recipe reheats well. Thank you George!

    I made this side dish at a dinner party and it pleased everybody...the vegeterians, the carnivours, younger kids. It was so easy to make and it is very versatile

    This was excellent and easy to make. Who needs mushy pasta? Thanks George. I also made this sauce for asparagas and it was great!!!

    I thought this sounded good, and was
    going to try it,but upon reading the
    receipe I found that the "Mac" you speak of is not in the receipe.Now to
    my knowledge, when you refere to "Mac" it is short for Macaroni, especially
    when you are using cheese. I figured
    this must be an oversight in this when
    this was written. I would like to see it corrected. Thank You~~JoAnn~~Marion
