    This is a great way to satisfy cravings for something crispy when on Phase One of the South Beach Diet or on the Atkins Diet. I have tried several different kinds of cheese. Kraft singles have cooked up the best so far. Swiss cheese does not brown, it just tastes like hard swiss cheese. I would not recommend it. Mozarrella tastes good with some salt added. It does not puff up though.

    Boy my tastebuds were fooled! The cheeses crisp up just like a cracker, you still have that cracker crunch. All the crunch without cheating.

    I just made them for my grandchildren and they loved them. I read everyones advice and baked them for 6 minutes. This is the crunch we've been missing for 16 months.

    These are amazing! Who knew something so simple would be so fantastic? I made these for my husband, who is in need of something to snack on since we started low carbing it, and he can't get enough! He wants a constant stash of them on hand at all times! He even takes them to work to share with other low carbers. The only thing I recommend changing is lower the salt or omiting it all together. They were a little salty in the original recipe for me.

    My 12 yr. old son and I made these. They are so easy! My son said they remind him of garlic bread. So...tonight's going to be italian night. Serving the "goldfish" with spaghetti squash w/ tomato sauce and grilled chicken. Ours took 7 min. We had to look hard to find any REAL American cheese, so be careful in choosing. The cheese food will ruin the recipe.

    I saw this recipe on TV over the weekend, and finally got the chance today to get all the details. I just made the Mock Goldfish, and they're really, really good. If I hadn't made them myself, I never would have have believed that they're just cheese. The other reviewers are right, 6 minutes is just about right to bake them.

    I'm not "low-carbing," but I am watching what I eat carefully and I am absolutely horrible about binging on snacks like chips, crackers, or even rice cakes. The "goldfish" are the perfect solution for a crisp and savory snack for me. I use one slice of cheese, no more. Since I have to work to make them, I would have to be very deliberate about going off my diet. They are really great - but like other reviewers, I had to watch cooking time carefully. I burned the first batch I made at 7 1/2 minutes, and half-burned the second batch at almost seven minutes. Now I set the alarm for six minutes and watch them closely after that. Great recipe!
