When I was working I'd prepare the salad the night before and let the roasted peppers, and onions, marinate. At work I was oftened asked where I got such a great looking salad. Tasted as good as it looks and easy to prepare.

Both my husband and I were tiring of a plain salad every night with dinner. I made this along with the asparagus souffle and it was wonderful. I am usually not to keen on the vinagerette dressing but I loved it. I will definately make this one again.
