    I never would have thought of putting butter on chicken, but this is fabulous. I have tried the butter mixture on other things as well - corn on the cob, tilapia, salmon. It has worked well on everything.

    First - this is a superb recipe, easy to make and full of flavor! When I make scampi butter I use commercially prepared clarified butters. These are extremely pure butters and are shelf stable in your pantry, even after you open them. As a result they are truly soft when you go to whisk the ingredients together. A bonus is that with a stable butter your scampi or other compound butter will stay fresh in the refrigerator for weeks. I buy mine from Odell?s in Nevada but there are several sources on the web.

    When I perfect the scampi butter I can envision this as a five. The chicken was so delicious and I used the left over scampi butter for a few dishs.

    This has quickly become a favorite to throw together when company come over at the last minute! It's so easy and very delicious! Great versitility as well. I threw some pine nuts on top of the cilantro/butter glaze and it gave it a great touch!

    George-Only so recntly have I gotten into sending reviews and am so very late in saying that the cilantro herb butter is WONDERFULLY TASTY. It also adorns my baked salmon and now my pan-seared sea bass.THANKS!
