This was an easy and INCREDIBLE meal. I think I could probably eat this every day! The chicken was extremely tender and the cilantro butter--well words don't describe it! I can't wait to try it on other items such as shrimp and salmon. The induction period is not so bad when you can eat like this. It's a life saver!!!

The compound butter (scampi butter is fabulous and can be used on many other meats. With the cilantro, it's fabulous. Would also be equally as good using flat leaf parsley. Mix the scampi butter with zucchini or spinach for a different taste. This recipe is excellent in my opinion. I love George's innovative recipes, really helps us stick to a controlled carb plan.

Grilling chicken with the cilantro butter on top was great but we also made dill butter with the same recipe for topping our salmon and it was divine!!!We froze the leftover butters and plan to make veggie saute next!!!!
Such a versatile and great recipe! Thanks!

WOW. In AZ the only way to cook in the summer is on the grill. I loved this! Great!
