    This recipe was absolutely delicious! I modified the tomato sauce a little by browning up some hot Italian sausage first, then adding the garlic, herbs and tomatoes. It was a complete meal. I was afraid that the eggplant was going to be mushy and water down the tomato sauce, but it didn't; the texture was just perfect. This is a great lower-carb replacement for lasagne.

    I guess eggplant just isn't my thing. I thought it was one of the worse tasting recipes ever and i followed the directions to the letter.
