    I have never had a better meatloaf even though I left out the Italian sasonings by accident. Could not find Prosciutto, so I used a thin slice honey ham.
    I also used about 1/2 ground sausage.
    What I like about this is that, as I live alone, I can cut it into slices, freeze it and reheat for later.

    I just made this meatloaf for friends and it was so yummy. Very tasty and hearty and filling. I made half the batch recommended and easily fed three nugry people. I also added some fresh basil leaves inside the meatloaf which gave it a nice kick! I highly recommend this recipe to try yourself. Even if you are not doing the "low carb thing", you will LOVE it!

    I liked this really much better then the old-fashioned way to make meatloaf, my hubby even asked me when was I going to make it again. Got the recipe posted in the kitchen where next week I will make again, thanks !!

    After seeing this stuffed meatloaf on Low Carb and Lovin' It, I was dying to try it. I finally got a chance to make it, and it was fabulous! My husband loved it, and agreed this recipe was a "keeper". In fact, before left for work this morning,he kissed me and said, "your meatloaf was great last night."

    This recipe is great. I never had meatloaf as a child because my mom could not make it. This was excellent. An added bonus for my husband was the proscuitto since he is Italian. Thanks for a great meatloaf.

    My husband and I really enjoyed this. You know it good if my husband eats it because he is a picky eater. It gave me a little indigestion. I think I needed to use leaner meat next time.
