    I made this meatloaf using Polish Boiled ham and shreaded mozzarella cheese for the filling. Came out wonderful. I did not use a baking pan I shaped the loaf and placed it on a cookie sheet on top of parchment paper. This allowed the fat to drain away. Also used a oven probe and it finshed about 20 minutes faster without the pan at 165 degrees. My kids even liked it...this recipe is definately a keeper.

    I have been on low carb for a few months and have noticed you have a tendancy to get in a boring eating routine. I tried this meatloaf recipe and it was absolutly delicious. I was amazed that it would hold together without breadcrumbs or oatmeal. The parmesan cheese did the trick. I would definately make this recipe again. Hooray for the homemade catsup!!

    My husband and I have been on carb diet for awhile now and we have lost alot of weight I was so glad when I seen your show . I made this the same day I saw it and we loved it .

    the meatloaf was moist. the procuitto gives good flavor without added salt. I used mozzerella cheese instead of provolone. My son enjoyed it so much that he asked for a second helping and
    he very picky eater.

    My husband and i tryed this and we just loved it. We were worried about the tomato topping but once its cooked in the oven its great!

    This recipe is simple, yet big on taste. The entire family enjoyed it from age 72 to 15. It is not often I have found gourmet style recipes that are on a budget I can afford and easily prepared and fit for a king. But that is what I find with Low Carb and Lovin' It. Thank you George!

    This recipe has great flavor, texture and aroma. Anyone who doesn't like meatloaf should try this one. We loved the prosciutto and provolone!

    We love meatloaf and this was no exception. First time to make it without breadcrumbs or oatmeal added and didn't miss it abit. I'll make this again. Delicious cold the next day
