This was so good. I left off the tomato sauce but the meatloaf itself was excellent. Served it with the mock mashed potaoes. Yum. Thought the low carb diet was going to suck but so far so good!

this was so delicious, and easy to make! very flavorful. the sauce was the best part! before cooking the loaf i tried the sauce, and was afraid it was going to be too bitter--but once it was cooked, it was the perfect compliment to the flavors fo the meatloaf. a great dish!

I originally tried this recipe when I was on a low-carb diet and my family absolutely LOVED it! We were talking about meatloafs a little while ago and this came up and they all raved about it!
Time for it to replace my grandma's old recipe as the family tradition.

I am not a meatloaf person but this had great flavor and was really moist. I loved the prosciutto and provolone in the middle, and it was a good surprise for my husband.

First had this meat loaf at the Havanna Club in The Villages, Fl where Mr. Stella is now the chef. It was the best my husband and I had ever had. It has now become one of our favorite dishes and we didn't change a thing in the recipe when we made it at home in Virginia.

Modifications: sauteed the veggies first (for better texture omitted splenda, prosciutto, and provolone; used drained, crushed tomatoes instead of sauce and paste
The flavour: excellent but a little too rich
Difficulty level: Very easy
Recommendations: use a turkey baster to get out the 1.5 C of grease which will come out of the meatloaf (floating on the top and sides doing so will not affect how moist it is hot or as cold or reheated leftovers
I plan to make it again tonight, though with ground turkey. It was too rich for my taste buds, and that is without the prosciutto or provolone!

All my friends and family think I'm a genius! I can't make this recipe without at least a half-dozen people showing up. I literally haven't had any leftover since the first time I made it, and I've made it at least a dozen times!

I thought the meatloaf was good. It was easy to make. However, if I make it again, I wouldn't use the prosciutto and mozzarella inside the meatloaf. It was just TOO much.
